I graded my student's Semester Final discussion and the Participation grade and when I entered the Participation grade it seems to have cleared out all record (that I can view) of my student. I can no longer view her work completed or her final grade. I can't even access the full course in Gradebook anymore.

This issue could be caused by the student enrollment(s) no longer being active. In the Gradebook, you can choose to "show inactive enrollments" to see past students. See How do I use the Performance/Gradebook tool?
