There appears to be two reported behaviors here. (1) Activities will not display due dates to be adjusted through the activity settings if the course is a continuous course type. (2) The "document template". If this is for picking from the "submissions type" menu in the activity settings, that will be available for organizations that enable G Suite on their domain.
