I am interested in archiving a course and gradebook for review down the road. Is it possible to copy or move a course to a new domain dedicated to archived classes or if you copy a course will the gradebook not also copy with the students assignments, etc?

It is possible to copy courses to different domains through the UI if you have the appropriate subscription to copy shared courses between the two domains. The copy process can be done via a CSV file to copy the courses to a different domain and move the enrollments to those new courses.
