There are several ways you can do this. If your role in Buzz can edit activities, you can edit, go to settings, and select "advanced options" for Visibility and Access, or for Advanced Activity Options. There are options for making the activity be completed before students can move on, or you can make them to have completed a different activity before doing the current one. Or you could put a password in place and send a password each day. The other thing you can do in the "edit" mode is simply hide activities. Then you would have to go in and unhide them when you want students to do them. But this would be for the whole class. You have to be pretty discerning when using these settings as they can be frustrating to you and to students. You should think about if you want to enforce this only with gradable activities or with all activities.

It's possible your school organization has disabled the "advanced activity settings" tool in the domain features page. Doing so would prevent users logged into that domain from seeing the advanced activity options card and it's nested setting "Students must complete this activity before continuing to the next".
