How can I limit the attempts my students are allowed to use on lessons? The questions don't change so some of my students just go through and write down the answers and go back in and answer them again. I only want them to do lessons 1 time.
If your assignment is made as a Practice (formerly homework) activity I don't think you can limit the number of attempts. That's why we use variables as much as possible.
If you use the Assessment template for assignments then you can limit the number of attempts.

Weslie, I need to amend my previous statement. I found I actually have a Practice activity where the students are limited to 2 attempts.
Under settings, go to Question Group Settings and click on Default.
You can set the number of attempt in the pop-up window.
