Unfortunately, no. That is an improvement that has been requested. It would be so much more user friendly if you could just type an "X" in the score blank.
Though there isn't a feature available for the quick edit tool to excuse individual student submissions, you may use the activity grader to batch update the scores and excuse multiple students for that specific activity. However the options are limited and apply to: Submitted, Unsubmitted, and All.
To open the activity grader, select the activity name from the column header of the teacher's gradebook, select the tools button (wrench icon), select Batch Update Scores from the menu.

Although this isn't for excusing multiple activities for a user, another option to add from what I previously stated while in the activity grader is that the teacher may select individual students then select the batch option from the tools menu and then an option will be displayed to excuse those selected students.
When I select multiple students on the GradeBook screen and hit the "Tools" icon, it only gives the option for Import, Export or Go To Final Grades.
We would appreciate the option to excuse on the Quick edit feature. It does allow for typing x but does not save this "x" (I am assuming for Excuse). It takes several clicks when we want to excuse multiple activities for a single student.
Everyone I have ever talked to cannot believe that using the X for excuse in the quick editor has not been added yet. Such a simple tool that would make everyday life so much easier.
