When creating a course, is it possible to create a child copy of a child copy or only a sibling copy of a child? (I ask because I was only given an option to create a sibling copy yesterday, I'm curious as to why. I thought this might be the reason.)

From your description it sounds like you met the following course copy restriction that only provides you the option to create a sibling copy: The copied course has no Master and no student enrollments. I have attached below our restrictions for the course copy operation.
