I notice in the domain settings, there is a Student Options settings, and one of them is "Allow students to change their password." We have a domain that we're using exclusively to house user accounts for guardians/observers, and we'd like to allow hem to change their password. Will checking this box in the domain settings allow for this (even though they aren't students)?

That domain setting strictly applies to the role of students and will not impact users that use the role of observer. Observers currently are able to change their password by selecting their profile picture then select the menu option "Change Password".
