We have been having an issue with student's course enrollments being set to "completed" after either hiding a specific activity or completing that activity. What is the setting for this? I want to better inform our teachers.

It sounds like the course is configured in it's settings to complete student enrollments when all items gradable items are complete or when aligned to a specific grading category have been completed. Hiding an item in course would cause that the item is no longer available to student's in the course.

The status is the current state of the enrollment in the course. Typically it starts as Active (working on course) and then is set to Complete when the student has completed their course.
