I recently created group sets for my courses for students who need Credit Recovery. I set each lesson and post-test with different settings for this group set. When I moved the student to the group set, the overall grade for the course changed to a 0 even though there were graded assignments. However, when I proxy as the student, it shows the current grade. Why is the student's grade a 0 in the course gradebook?

An overall score of zero for a student when there are assignments that average over zero indicates that a student has scored below passing on an item that has "Require a passing score for course credit" enabled in the item gradebook settings. The setting will either need to be disabled or the student will need to attempt again for a higher score.
