I had to redo my course. When I did it deleted all my students work. Is there a way I am able to restore them? I am just the teacher of the course not the administrator.

Student grades, time spent, submissions, ect. are tied directly to the activities that exist and are available to the students. So, if you deleted an activity that had student submissions, then the student information would not display (would appear to have been deleted).
To get the student information to display and impact their overall score, you would need to restore the deleted activities.
