I want to create an assessment where students respond to a few of the questions with a video response. Is this possible? I know it can be done through assignments.
Yes, this is possible! When an assessment uses an Essay type question, students will have the option to record a video submission to answer the question. They will select the button highlighted in my screenshot below.
