Unfortunately, there isn't an ideal way to determine this in Buzz. One possible workaround is to look at the "Activity" tab on the Student Grades screen to see when the student navigated to the activity and how much time they spent viewing it to roughly determine when they may have marked the non-gradable activity as complete. If you need more details on when a student completed an activity, you may want to consider using a gradable activity.
