I had to change an answer to a question after a student took the assessment. Is there a way to have the student's score re-scored and the updated score show in the gradebook?

Hello Jackie,
A student's submission retains the information of the assessment at the time the student started their attempt, so for a student to use an updated assessment version they would need to start a new attempt. That being said it is possible to manually regrade an already submitted assessment as a teacher from the gradebook if it is determined that they should receive a higher or lower score.
