When you are in the editor for the activity you should be able to go to the history tab to see when it was first created/saved.

One possible solution would be to have them use the vertical line key (shift-forward slash).
As long as you use the same key to code the answer it seems to work.

Yes, you can do this. From the people or gradebook screen you can check the box in front of individual students. You can also click the top box to select all.
