Yes. In the Analytics tab of an assessment, you can view a summary of answers for an individual question. Below this, there is a link to remove the question from the score.

I do like, however, that I am able set up all my questions in "edit all" but choose my answers in the simple editor. Perhaps an alert that can be ignored would be more appropriate than not allowing...

I do not know of a way to bulk edit to allow for multiple documents. However, there is a feature request to add more options for bulk edit.
