So, while the button does not appear, you can still use a strikethrough shortcut in the text editor.
Mac:
COMMAND + SHIFT + X
Windows:
CONTROL + SHIFT + X

Thanks for the feedback, Jeremy. As we work on new authoring tools, we would love to introduce some bulk editing options that this could fit with. I will make note about this particular need.
