Hey Brook Greno, you can navigate to the activity from the student's For Me page in the Gradebook. Once there, you can edit the settings for the activity or delete it.

Score Display is for the display of the individual activities scores. You would want to enable Points (if weighted categories are not used) under Visible Columns.
