How do you begin a new school year? Do you keep the same domain and edit the title and domain settings to match the year? This I think would be easiest as the admin. wouldn't have to re-enter LTI information, etc. Or should we start a new subdomain for a new year? Would love your thoughts!!

Typically, a subdomain is a school derived from it's parent domain or school district and doesn't reflect a specific school year in it's title. This can be specially challenging for large school districts to manage changing domain settings every year.
If you want to make edits to reflect a specific year, then I would advise to edit the title of the domain and settings within it as needed to keep the structure of data and user access organized.
